Quinoa, kale, asparagus and avocado have long been on my list of favorite foods. So when I came across this pretty little salad on Pinterest with all those ingredients and more, I knew I had found my dinner ❤ Can’t wait to get home, throw on some musica and whip this up.

Recipe:

4 handfuls of lettuce mix

2 handfuls of finely chopped kale

1/2 bunch of asparagus

1/2 cup of cooked quinoa

4 tablespoons toasted pumpkin seeds

1 avokado

1 clove of garlic + 2 tablespoons balsamic vinegar 1 teaspoon honey + + 6 tablespoons olive oil (for the vinaigrette)
